Episode 03 - Baked Salmon
November 16th, 2007Ingredients:
1 tsp of salt
Season all salt
Black pepper
4 pcs Salmon or whole salmon (if whole, make sure it’s clean from the butcher)
Non-stick cooking spray
Directions:
Season cut up salmon with 1 tsp. of salt, a dash of season all salt, and a 1/2 tsp of black pepper. Arrange fish in a 9 inch baking dish, garnish with bellpepper and onion (peel skin away from onion). Place in oven to bake at 400 degrees for 45 minutes.
Golden Fried Tilapia
October 1st, 20071/4 CUP FLOUR
1/2 CUP CORNMEAL
6 TO 8 ( 4 TO 8 OUNCE) TALAPIA OR FISH OF YOUR CHOICE
IN SHALLOW BOWL, BEAT EGGS UNTIL FOAMY. IN ANOTHER SHALLOW BOWL, COMBINE FLOUR, CORNMEAL, SEASONINGS AND A LITTLE SALT.
DIP FILLETS IN EGGS, THEN COAT WITH CORNMEAL MIXTURE.
HEAT ¼ INCH OIL IN LARGE SKILLET AND FRY FISH OVER MEDIUM-HIGH HEAT FOR ABOUT 4 MINUTES ON EACH SIDE OR UNTIL FISH FLAKES EASILY WITH FORK.

Baked Chicken
July 30th, 2007Ingredients:
1 whole chicken breast or 8 pcs chicken cut up
Season all salt
Non-Stick cookware
Directions:
Wash cut up under cool water. Season to taste with season all salt until there’s a slight reddish color (be careful not to over season). Place seasoned chicken in 3 inch non stick baking dish and garnish with slices of onion (about 1/3 of an onion). Place in oven to bake at 400 degrees for 1 hour.

Fried Chicken
July 30th, 2007Ingredients:
8 pcs of chicken of whole chicken cut up
Season-all salt
1 1/2 cup of Crisco vegetable/canola oil
1 cup flour
8 to 10 in skillet
Black pepper
Directions:
Take chicken and rinse in cold water. Dry chicken on paper towel. Season chicken to taste with season-all salt and black pepper, then coat with flour. Heat 1 1/2 cup oil in frying pan and test heating with a drop of flour. Fry chicken on one side 15 minutes until golden brown, turn over and repeat. Garnish with onion.
Suggested Side Dishes:
Baked Beans, Potato Salad, Cabbage, Broccoli, Macaroni and Cheese

Episode 01 with Rasheeda - Ol’ G Chicken
July 11th, 2007Arlinda cooking chicken with mushroom gravy, broccoli & rice with co-host Rasheeda.
Ingredients:
2 chickens, quartered
2 (10 ounce) cans of cream of mushroom soup
Season-all salt
Onions
Directions:
Place chicken in large shallow baking dish. Blend soup in blender and combine soup, season-all salt, and onions. Pour mixture over chicken. (You may sprinkle a little paprika on top.) Bake covered at 300 degrees for 1 hour 15 minutes.

1 CAN OF PINK SALMON (14 ¾ oz) FRYING PAN
¼ CUP ONION ½ Tsp SALT
VEGETABLE OR CONOLA OIL ½ Tsp PEPPER
1/8 CUP BELL PEPPER (OPTIONAL)
1 EGG
1 Tbs. FLOUR
2 Tbs. YELLOW CORNMEAL
DIRECTIONS:
IN A SIDE DISH COMBINE1/3 CUP CORNMEAL AND ¼ CUP OF FLOUR.
SCOOP INGREDIENTS INTO SMALL BALLS WITH A LARGE SPOON. ROLL BALLS INTO CORNMEAL/FLOUR MIXTURE AND PAT INTO PATTIES.
HEAT ½ CUP CRISCO VEGETABLE OR CONOLA OIL IN SKILLET HEAT TO MEDIUM HIGH. COOK ON MED HIGH FOR 4-5 MINUTES.
AND LOOK FOR EDGES TO BROWN THEN TURN AND REPEAT.
